Ingredients

  • 1/3 cup of The Pickle Monster (add more if you like)
  • 2KG Kipfler Potatoes – cut to walnut size pieces
  • 1.5 cups whole egg mayonnaise
  • 1/2 cup sour cream
  • 5 boiled eggs – smashed
  • 1/2 cup fresh dill – finely chopped
  • 1/2 cup fresh chives – finely chopped
  • Juice from 1/4 lemon
  • 1/2 red onion – finely diced
  • 1 stick celery – finely diced

Method

  1. Cover potatoes in a large pot with salted water. Bring to the boil and cook for approximately 12 minutes, or until fork tender.
  2. In a large mixing bowl, combine mayonnaise, sour cream, dill, celery, red onion and Pickle Monster. Mix well.
  3. Mix in eggs and potatoes.
  4. Transfer to a serving bowl and finish with chives, lemon juice and a drizzle of The Pickle Monster.
  5. Season with salt and pepper.

Vegan Option

  1. Substitute whole egg mayonnaise for vegan mayonnaise
  2. Substitute egg for crumbled tofu
  3. Subtract sour cream from recipe
