Sunny Girl Chicken Bowl Recipe

Bright citrus. Tropical sweetness. Clean heat. This Sunny Girl Chicken Bowl combines limoncello-marinated chicken with fresh salad, Persian feta and vibrant herbs for a bowl that’s balanced, exciting and packed with flavour.

Perfect for BBQ season, meal prep or a fresh summer dinner.

Ingredients

  • 3 tablespoon Sunny Girl
  • 2 chicken thighs/breast
  • Persian Feta
  • Lettuce
  • Red onion
  • Avocado
  • Cherry tomatoes
  • Lemon
  • Olive oil
  • Basil
  • Parsley
  • Carrot

Method

Chicken

  1. Marinade chicken thighs in Sunny Girl for 1–6 hours.
  2. Cook thighs on BBQ or fry pan for approx 20 minutes or until cooked through (internal temperature of 75°C).
  3. Set aside for 5 minutes before slicing.

Salad

  1. Chop cherry tomatoes into quarters.
  2. Thinly slice red onion into half rounds.
  3. Shave thin slices of carrot.
  4. Chop avocado into cubes.
  5. Roughly chop lettuce.
  6. Rough dice basil and parsley.
  7. Combine all salad ingredients in a large salad bowl.
  8. In a small bowl, mix equal parts lemon juice and olive oil with a fork to combine. Season with salt. Dress salad.

To Serve

  1. Add a large portion of salad to a bowl.
  2. Top with Sunny Girl chicken.
  3. Add Persian feta.
  4. Add Mango Salad.
  5. Finish with extra Sunny Girl for an extra hit of heat.
