Sunny Girl Prawn Tostada Recipe

Bright citrus. Tropical sweetness. Floral heat. This Sunny Girl Tostada layers juicy prawns, mango salsa, avocado salad and a limoncello hot sauce mayo into one vibrant, flavour-packed seafood tostada.

Perfect for entertaining, summer lunches or when you want something fresh with heat.

Ingredients

Prawns

  • 15 large prawns (shelled and cleaned)
  • Old Bay seasoning
  • Olive oil

Tostadas

  • Tostadas
  • Cherry tomatoes
  • Persian feta

Sunny Girl Mayo

  • 2 tablespoon Sunny Girl
  • 2 tablespoon Kewpie Mayo
👉 Sunny Girl – Limoncello Hot Sauce 250ml (Solbevi x Keating & Co)

 

Mango Salsa

  • 1 large mango – cut into cubes
  • 1/2 of a jalapeño – seeds removed, diced
  • 1/4 of a red onion – thinly sliced half rounds
  • Lemon juice
  • Small bunch coriander – roughly chopped

Avocado Salad

  • 1 avocado
  • Small bunch of coriander – roughly chopped
  • Lemon juice
  • 1/5 tablespoon sour cream
  • Salt and pepper to taste

Quick Pickled Red Onion

  • 1 red onion – sliced
  • 1 cup white wine vinegar
  • 2 tablespoon sugar
  • 1 tablespoon salt

Method:

How To Make Mango Salsa?

  1. Slice jalapeño lengthways and remove seeds. Dice into small cubes.
  2. Cut mango into cubes and transfer to a bowl.

How To Make Avocado Salad?

  1. Dice 3/4 of the avocado into cubes and place into a bowl.
  2. Mash remaining 1/4 avocado with a fork until smooth.
  3. Add sour cream, lemon juice, salt and pepper and mix well.
  4. Transfer to bowl with cubed avocado and gently combine.
  5. Add coriander.

How To Make Quick Pickled Red Onion?

  1. In a small saucepan, heat vinegar, salt and sugar until dissolved.
  2. Place red onion in a bowl and cover with vinegar solution.
  3. Allow mixture to cool to room temperature.

Prawns

  1. Remove shell and clean prawns.

Option 1:

  1. Add 1 tablespoon Old Bay and splash of olive oil to prawns and mix well.

Option 2:

  1. Add 1 tablespoon lemon juice, pinch of salt and splash of olive oil to prawns. Mix well.
  2. Gently fry prawns over medium heat in a pan (or BBQ) for 1–3 minutes each side or until cooked to your liking.
  3. Set aside.

Sunny Girl Mayo

  1. Combine equal parts Sunny Girl and Kewpie Mayo.
  2. Mix well.

Assembling the Tostadas

  1. Heat tostada in oven until crisp.
  2. Lay tostada on serving tray and assemble:

Tostada 1

Top tostada with:

  • Persian feta
  • Cherry tomatoes
  • Avocado salad
  • Prawn
  • Pickled red onion
  • Teaspoon of Sunny Girl mayo

Tostada 2

Top tostada with:

  • Mango salsa
  • Sunny Girl mayo
  • Prawn
  • Pickled red onion
