WHY THIS RECIPE WORKS
Good salsa is all about balance. You’ve got sweetness from the tomatoes, freshness from the herbs and acidity from the lemon — but what takes it further is the Funky Beast Chilli Oil.
Using just the oil gives you depth, warmth and spice without overpowering the dish.

Ingredients
- Tomato - Cherry Tomato (quartered) or Truss Tomato (cut into 1cm pieces)
- Coriander - 1/2 bunch, finely chopped
- Parsley - 1/4 bunch, finely chopped
- Red Onion - 1/2 small Onion, finely diced
- Lemon Juice - 2 tablespoon
- Funky Beast - 2 tablespoon (oil only)
- Salt to taste
Method:
- To make dressing; in small bowl, combine Lemon Juice, Funky Beast and pinch of salt. Whisky with a fork until well combined
- In a large mixing bowl, add remaining ingredients and mix until tomatoes are coated in herbs
- Add dressing and mix until salad is coated with dressing
- Serve with your favourite protein, side of a curry or with flat bread as a snack
HOW TO SERVE
This one goes with everything.
- Spoon over grilled meats or seafood
- Serve alongside curries for freshness
- Load onto flatbread or wraps
- Use as a side for BBQs

PRO TIPS
- Use ripe tomatoes for maximum flavour
- Don’t skip the resting time — let it sit for 10–15 minutes before serving
