Ingredients

  • 500g Beef Mince
  • 500g Sausage Mince
  • 2 cloves Garlic
  • 2 Carrots
  • 1 Large Red Onion
  • 2 Celery Sticks
  • 50g Tomato Paste
  • Salt, to taste
  • Puff Pastry
  • 1–2 Eggs
  • Keating & Co Mister Mo-Hawk Sauce

Method

  1. In a food processor, process the carrot, onion, celery and garlic until finely diced.
  2. In a large mixing bowl, combine the beef mince and sausage mince, mixing well with your hands until fully combined.
  3. Add the carrot, onion, celery and garlic mixture and mix through.
  4. Season with salt to taste.
  5. Mix in the tomato paste.
  6. Add Keating & Co Mister Mo-Hawk and combine until evenly mixed throughout.
  7. Lay out the puff pastry and allow it to soften slightly.
  8. Whisk the eggs together in a small bowl.
  9. Cut each sheet of puff pastry in half. Place the meat mixture along the centre of the pastry, roll tightly and brush the edge with egg wash to seal. Cut into bite-sized sausage rolls.
  10. Repeat until all the mixture and pastry has been used.
  11. Place the sausage rolls seam-side down onto a baking paper-lined tray and brush the tops with the remaining egg wash.
  12. Bake in a preheated oven at 185°C for approximately 20 minutes, or until the pastry is golden and puffed and the filling is cooked through.
  13. Serve warm with extra Keating & Co Mister Mo-Hawk for dipping.
