The Mad Seafood Roll

Sweet heat. Fresh seafood. Soft rolls.

This one feels a bit fancy without being hard to make. Juicy prawns, crab meat and creamy mayo get hit with Mad Mango Hot Sauce for the perfect mix of sweetness, heat and tang. Packed into soft rolls, this is the kind of thing that disappears fast at lunches, BBQs or long weekends.

Why This Recipe Works

The seafood is light and sweet, so the sauce needs balance.

Mad Mango brings:

  • mango sweetness
  • habanero heat
  • acidity
  • richness
  • punch

Mixed through the mayo, it coats the seafood without overpowering it.Soft rolls and crunchy lettuce finish it properly. 

Ingredients

  • 400 grams shelled, cleaned and cooked Prawns (Sous Vide or Poached)
  • 200 grams Crab meat
  • 1/2 cup Mayonnaise (Kewpie or homemade)
  • 1/2 cup + tablespoon Mad Mango Hot Sauce
  • 2 teaspoon Lemon juice
  • 1 tablespoon Chives
  • 1 teaspoon Sweet Paprika
  • 1 Lettuce
  • 4 soft rolls

Method

  1. Combine Mayonnaise, Mad Mango Hot Sauce and Lemon juice in bowl. Whiskey well to combine
  2. Add Prawns and Crab meat to Mad Mango mixture and carefully mix
  3. Open rolls and line with Lettuce
  4. Add Mad Mango Seafood mixture to rolls
  5. Top with Chives and a sprinkle of Sweet Paprika
  6. Serve with Garden Salad, Chips or Pomegranate, Avocado and Pear salad

  • crispy chips
  • garden salad
  • cold drinks
  • extra Mad Mango on the side

Best eaten fresh.
